Makes 12 pancakes
Pancakes that capture the taste of Autumn with just the right
amount of sweet flavor and fall spice. Decorate them with raisin
"Jack o Lanterns" for Halloween fun!
2 cups biscuit mix (e.g. Bisquick)
1/3 cup canned pumpkin
1 1/2 cups milk
1/4 cup vegetable oil
3 tablespoons sugar
1 teaspoon pumpkin pie spice
2 large eggs
1/4 cup Grape Nuts or similar cereal
Raisins to taste
Heat griddle or skillet over medium heat or to 375 degrees.
Spray or grease griddle. In medium bowl, stir all pancake
ingredients (except raisins) until well blended. For each
pancake, pour slightly less than 1/4 cup batter onto hot,
griddle. For Jack-O-Lanterns, make them in an oval shape and add
a "stem" at the top. Add raisins to make Jack-O-Lantern faces.
Cook until edges are dry. Flip pancake onto side with the
raisins. Cook until golden brown. Serve with 100% pure maple
syrup. |
